The purpose of the Everyday Bean Blog is to show that eating beans can be healthy, fun, and economical. My family has eaten beans on a regular basis for a very long time. Eating beans has allowed us to stretch our grocery dollars and eat healthy food at the same time. In many countries, eating beans is considered a normal, everyday occurrence. However, in the United States, with the exception of vegans/vegetarians, beans are often looked down upon.
I admit that they are a humble food, but they are quite tasty if cooked or baked the right way. Beans can be very functional. They can be appetizers, main dishes, and even desserts. They can be used to make pasta sauce and bean flour can be used to make bread or dips.
Beginning December 1, 2025, it is my goal to use beans in some way every single day for the next year as a way to use what we have on hand in our food storage and to use our food storage as a way to pay off debt. We are currently almost $10,000 in debt not including our house. (We owe a lot on our house.) We also have a very old van that will need to be replaced at some point so it will be helpful to save money for a newer used car. We live on one income which makes this a big challenge. I do think that we are capable of at least paying off the debt by the end of next year. I hope that you will follow our journey and offer helpful tips and comments along the way.
