I’m Sick and Tired of Being Sick and Tired

Have you ever looked at yourself in the mirror and wondered how you got to the point that you are? Or have you looked at the differences between old pictures and what the pictures and mirrors say now? That’s been the case with me lately. I am grossly overweight and not in the best health. But i feel that I can change things for both myself and my family. So, I’ve decided to revamp the current challenge were doing and do it in a new way.

I have decided to go organic…eventually. For now, we are going to eat what we have in storage which is conventionally produced stuff except for a handful of cans of organic lentils. When I buy food or supplies at the store, I will be buying only organic, grass-fed, minimally processed food and household items that are good for our bodies as well as our minds. You might say that we are in transition to organic. We have to start somewhere, and the journey of a thousand miles begins with a single step.

The twist to this challenge is that we are going to attempt to do this on a limited budget. Over the next year I plan to share tips and strategies for eating and living on a shoestring budget while still eating as healthy as possible. Tonight we bought a handful of things at a local box store. We bought organic apples, grass-fed butter, and grass-fed cheese. We also bought some peanuts in order to make our own peanut butter without sugars and seed oils. We also bought some conventionally grown onions because they are on the clean 15 list of the Environmental Working Group. Eventually we will grow our own organic produce or find local sources of organic food. For now, this will work.

Right now, we are going to eat what we have on hand to save money to buy the food that we need to be truly healthy. Tonight’s dinner was homemade sourdough pancakes, homemade blueberry compote, and homemade vanilla whipped cream. It was so good that it was restaurant worthy. I didn’t get any pictures, but I am going to start trying to get pictures of our meals.
